
Galician Soup |
| There are many different recipes. This recipe is for 2 people. |
| 1/2 medium sweet onion chopped or sliced |
| A couple ounces of olive oil |
| 1/4 pound ham cut into pieces (Serrano ham is used in Spain) |
| 1 medium potato |
| 1 can cannellini beans drained (white kidney beans) |
| 2 cups of chopped cabbage (can also use spinach) |
| 2 bay leaves |
| 1/2 teaspoon garlic |
| 6 cups chicken broth (low sodium broth works fine too.) |
1. Sautee the onion in the olive oil until soft. 2. Place all of the ingredients into a large pot and cook for about 40 minutes. 3. Remove the bay leave before eating. |
